Ingredients

Protein & fresh

  • 500g lean beef meatballs
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 1 small bunch basil (optional)

Cupboard & chilled

  • 300g high-protein pasta
  • 2 tins chopped tomatoes
  • 2 tbsp tomato purée
  • 1 tsp dried oregano
  • 40g grated hard cheese (optional)
  • 1 tbsp olive oil

Cook it once. Win the week.

Method

    Heat the oil in a wide pan over a medium-high heat. Brown the meatballs for 6–8 minutes, turning regularly until coloured all over.

    Lower the heat, add the onion and cook for 4 minutes. Stir in the garlic, tomato purée and oregano for 1 minute.

    Add the chopped tomatoes, season and simmer for 12–15 minutes until the sauce is rich and the meatballs reach 75°C in the centre.

    Cook the protein pasta in well-salted boiling water according to the packet instructions. Reserve a splash of cooking water, then drain.

  5. 05

    Toss the pasta through the sauce, loosening with cooking water if needed. Divide between four portions and finish with basil and cheese.
