Ingredients

Tins & packets

  • 2 tins green lentils, drained
  • 1 tin chickpeas, drained
  • 1 tin light coconut milk
  • 1 tin chopped tomatoes
  • 1 tbsp tomato purée
  • 1 vegetable stock cube
  • 300g sticky or jasmine rice

Fresh

  • 1 large onion, diced
  • 3 garlic cloves, crushed
  • 1 tbsp fresh ginger, grated
  • 2 large handfuls spinach
  • Juice of ½ lime
  • Fresh coriander to finish

Spices & seasoning

  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and black pepper

Optional protein upgrade

  • 200g frozen shelled edamame
  • High-protein unsweetened soy yogurt

Method

    Cook the rice according to the packet.

    Meanwhile, soften the onion in a large pan for 4–5 minutes. Add the garlic, ginger, curry powder, cumin, turmeric and paprika.

    Stir in the tomato purée, chopped tomatoes, coconut milk and stock cube.

    Add the lentils and chickpeas, then simmer for 15–20 minutes until thick and rich.

    Stir through the spinach for the final 2 minutes. Finish with lime juice, black pepper and coriander.

    Serve over sticky rice.
