Ingredients

Protein & fresh

  • 600g chicken breast, sliced
  • 2 peppers, sliced
  • 1 red onion, sliced
  • 2 garlic cloves, crushed
  • 1 lime

Cupboard & chilled

  • 300g high-protein pasta
  • 2 tbsp fajita seasoning
  • 200g reduced-fat soft cheese
  • 1 tin chopped tomatoes
  • 1 tbsp olive oil
  • Fresh coriander (optional)

Method

    Cook the pasta in well-salted boiling water according to the packet instructions. Reserve a mug of cooking water, then drain.

    Heat the oil in a large frying pan over a medium-high heat. Sear the chicken for 5–6 minutes until golden and cooked through to 75°C.

    Add the peppers and onion and cook for 5 minutes until softened with charred edges. Stir in the garlic and fajita seasoning for 1 minute.

    Add the chopped tomatoes and soft cheese, then simmer for 3–4 minutes until creamy. Loosen with a splash of pasta water if needed.

    Fold through the pasta, finish with lime juice and coriander, then divide into four portions.
